I have eaten more McTaco King over the past eight months than I have in all my 28 years of existence. I know fast food is horrible for me and for the planet; I feel like poop approximately 7 seconds after consumption, and I pretty much hate myself for the next 24 hours…yet I continue finding myself muttering “yes, I’ll take fries with that.” My excuses for this behavior don’t really matter. The fact is that I’m a nursing mama and I still get very little sleep; good nutrition is paramount to my survival. I need to make a change, and I need to make it yesterday. Over the past month I have been trying to solve this little pickle with one uber important solution: having snacks on hand, at all times. I’ve gone through the yooj: carrot sticks, apples and peanut butter, blah, blah, blah; but I’ve also made several batches of this recipe for a nutty little power snack that always leaves me feeling…dare I say Princess Valhalla Hawkwind-esque? Yes. Definitely, yes.
Here are some of the oh-so-delicious in a spicy/savory/yet sweet enough for a sugar craving ingredients:

The recipe yields precisely enough to fill one quart mason jar, your hand, and either one reusable snack bag, or a couple of empty baby food jars. Dad and I think the Nutty Power Snack is really yummy and crunchy good!
I made this last night. Yum! Such a quick easy recipe.
Isn’t it the best? I make a batch every week and a half or so…ahem…sometimes more than that.

We love eating blue corn tortilla chips with cottage cheese. Sooo good, my husband is hooked.
