italian sausage & vegetable medley

More often than not, impromptu dishes, thrown together without much forethought, turn out to be the most delicious. Such was this simple dish, prepared and served within 20 minutes on a particularly busy, stressful day last week. It had me reaching for the camera, and scrambling to find a scrap of paper to scribble down the recipe before it left my brain for good. This is absolutely fabulous on its own, but could also make an excellent soup with the addition of a quart of vegetable stock, or even spooned over zucchini ribbon pasta.

Italian Sausage & Vegetable Medley

  • coconut oil
  • Italian sausage – if you’re local, you must try it from New Seasons
  • 1 medium zucchini, sliced into half moons
  • 1 cup small Crimini mushrooms, sliced
  • 3-4 kale leaves, finely chopped
  • 1 quite small yellow onion, diced

Optional:

  • 1 egg for each serving
  • kelp flakes or fine sea salt to sprinkle over fried egg

Directions: In a large cast iron skillet, heat a spoonful of coconut oil and saute Italian sausage over medium-high heat until the outside is brown, but insides are still pink. Toss in zucchini and stir, cooking for two minutes. Add mushrooms and cook for a few more minutes, then add kale and cook for several more. Finally, add onion and saute for another five minutes. In a separate, smaller skillet, fry one egg in coconut oil for each serving. Top each serving of the medley with a fried egg, sprinkle with kelp flakes, and serve immediately. Mangia!

homemade toothpaste recipe

Last year when my husband came back from Italy, he heard statements like this:

“Oh we don’t use shampoo anymore.”

“The body lotion is in that canning jar now.”

And the most alarming proclamation: “I made homemade toothpaste!”

He was, and still is, a trooper. The first homemade toothpaste recipe that we tried was from Amy’s (excellent) emailorder #11. It was exciting and liberating and we liked it, though we ultimately decided that it was a bit soapy tasting and the essential oils were too strong for our son. That said, we still use it for traveling as it keeps well in a tincture bottle. Over the winter I ran across Rachel’s recipe by way of Progressive Pioneer; I adapted the recipe ever so slightly, and that’s what we’ve used ever since. My son adores it and will not use any other kind.

Homemade Toothpaste Recipe

2 tsp. Dr. Bronner’s Baby Mild liquid castille soap

4 T. coconut oil

1 T. boiled water

2 T. xylitol

15 drops peppermint essential oil

7 drops sweet orange essential oil

Disclaimer: I drink quite a lot of coffee and tea, which stains my teeth. When I notice the stains, I switch to a natural whitening toothpaste for a few days, and then switch back. The reason I do this is because it contains glycerin, which I do not want on my teeth often, but I really like that particular brand of toothpaste. Sadly natural toothpaste still contains nasty ingredients, and holy crap it is so wicked expensive. I make my own because it is outrageously cheap, truly non-toxic and reduces packaging waste.

the perfect body lotion

For nearly a year now I’ve been making my own body lotion. I have tried several recipes, created several of my own, and recently tried a recipe which I adore. Currently I am head over heels for Rosemary Gladstar’s Perfect Lotion recipe found in her resourceful book, Rosemary Gladstar’s Herbal Recipes for Vibrant Health: 175 Teas, Tonics, Oils, Salves, Tinctures, and Other Natural Remedies for the Entire Family. The ingredient list is somewhat on the long side, but the pay-off is worth any fuss.

So why make your own body lotion? It’s cheap, ensures it’s entirely non-toxic, reduces packaging waste, and best of all, it’s fun to make. Tie a bow around the jar and you have yourself a fantastic gift.

This batch has a lovely, light scent by way of essential oils: just three drops rosemary, two peppermint and one drop lavender. This combo is my go-to scent, though next time I’ll use a combination of grapefruit and rose absolute, my current favorite for homemade baby wipes. As the weather cools down I plan to whip up a batch of my cream which kept our skin hydrated all winter. I’m super excited to share this recipe with you in the coming months.

three secrets to weight loss

First off, feet are weird. Secondly, I am now in the 160’s. Granted if I had like a sip of water I’d push back into the 170’s but hush now, I AM IN THE 160’s! For those keeping tabs on my journey, that means that I have lost over 40 pounds, the majority of that occurring within the past three months. This also means that I am at the half-way point of my weight loss goal. In all honesty I hesitate even posting that I have a goal at all, because I truly just want to feel healthy and be active. So if I end up being smaller or larger than this, that suits me fine. So what does 169.8 look like?

K. I realize I have yet to show you a full body shot. Later. I promise. And PS I don’t think I’m cool. Taking photos of yourself is seriously awkward.

I will share my three key secrets to weight loss later in this post, but first I want to reflect on what my mind has been going through, a roller coaster to say the least. Weight loss is not just about the shrinking number on the scale; with each pound shed, the emotions that caused me to gain that pound in the first place seem to wash over me. It takes true courage to allow all of the emotions surrounded with weight loss to surface, deal with them head on, and then release. But that’s how one heals from the inside out. I still have a long way to go, both physically and mentally. Here’s a little recap of this little loop-de-loop of self discovery:

  • Some days I wake up, look in the mirror, and feel like a total sex pot. I am really starting to notice my loss.
  • Other days I’m extremely inpatient. My mind is ready for vibrant health, yet of course my body can’t lose the weight and heal my gut overnight.
  • Then there are days where I feel like the weight is coming off too quickly and I start to panic. I feel more exposed. Those are the days that I unkindly remind myself that I am disgustingly fat and these stretch marks I’ve accumulated will always render me heinous. Nice eh? I wouldn’t even utter those words to my worst enemy.
  • I’m paying more attention to fashion, purchasing little baubles, fussing with my hair and wearing make-up. A complete 180 from the past three years. It feels good. Like the “old” me. It’s incredibly fun to dote on myself like that but…there’s a fine line between self care and vanity. I’m currently walking that tight rope. But I will allow myself to feel good, to feel proud, and to hold my head high…because I am worthy of that. This oldie has been playing through my mind these days.

We are all ruled, to a certain degree, by our internal dialogue. Half the battle is becoming aware of the negative self talk and squelching its nonsense whenever possible. The other half is to remind yourself of this: I am strong. I am beautiful. I am worthy. And in my case: I am woman, hear me roar.

Three Secrets to Weight Loss

If you’ve made it this far, I think it only fair to share my three secrets to weight loss. Which really are not secrets at all, but plain old common sense. The days when I feel most alive, energetic and the scale complies, are the days when these three things have aligned:

  1. Sleep
  2. Food
  3. Fresh air

That’s the magic combo. Throw some good company and a moment to myself in there and I’m spazzing out hardcore. A natural high. There is no secret elixir for optimal health out there people. It’s just good plain self care. I don’t claim to be perfect at hitting these three points on a daily basis, in fact I regularly fail at #1, but making sure to add these into my life more than what I was doing before, has helped me drop those 40 pounds. No one is perfect, and no one expects you to be perfect, except for yourself. The key for me is to forgive myself when I make a mistake, and then carry on.

top ten favorite summer vices

I am passionate about many things, but so often they are simply fleeting, mini-obsessions, brought on by the changing seasons and current trends. I thought I’d start recording these silly, superficial frivolities, a hilarious time capsule for me when I’m old and gray, and perhaps you’ll identify or discover something new along the way. These (mainly) ridiculous things can mean so very much to me, when time for myself is at a bare minimum. One minute stolen here, another moment there. Each small act of self care helps me remain sane, especially when my life is centered on caring for others. Little Anilia described it best. So without further ado, I bring you a list of my summer favorites, before summer leaves us for good.

1. Nail Polish – It’s been like four years since I’ve painted my nails but lately, I can’t get enough. It’s not the healthiest, but it feels indulgent and puts an extra spring in my step. It might be a small act, but it has given me more pride in my appearance, a positive thing for sure. Oh, and since starting this, my once weak, easily torn nails are strong and growing like mad.

2. Kombucha – You know I love kombucha and its amazing health benefits. Right now I can’t get enough of G.T.’s Citrus variety. I’m spending all of my mad money on this, so be prepared for a how-to kombucha post soon.

3. Trashy Books and Magazines – This is a once in a blue moon purchase for me. I generally loathe the entire tabloid industry, but every now and again I indulge. Couple this with the above two vices, and its a killer, solo afternoon. And Janet Evanovich? How can one go wrong with a tough but clumsy New Jersey bounty hunter? Adorable.

4. Sea Salt Hairspray – A few spritzes of this in damp hair, along with a scrunch or two, and I’m out the door with gorgeously beachy hair. I’ve been using this all late spring/summer long in between ‘poo days. Anyone interested in my recipe or is it too late in the season? Personally I like sexy waves all-year round.


5. Coffee - Cold, hot, it matters not. I’ve been quite naughty with the coffee lately as its an “illegal” food on my diet that I seem to have real trouble giving up. Occasionally my husband brews his own (he does it a bit differently, but Jill has a great how-to), though local favorites include Motivasi (they use Stumptown beans) and the roasters Extracto (best: No. 7) and my favorite: Ristretto (best: Cowboy Blend).

6. The Book - Perhaps the most inappropriately hilarious book of all time. My husband brought this home from Chicago a few weeks back. When he got home we read it that night, cover-to-cover. I had to grab onto his chest so I wouldn’t fall off the couch I was laughing so hard. I may have even peed my pants a little. I wish I was kidding. But after a week of solo parenting and not getting him to bed before 10pm each night, the book couldn’t have been more appropriate. If you have a child, and are not offended by potty talk, get this book. It does not disappoint.

7. Homemade Soap – Don’t get me started on homemade soap. This is truly one of life’s simple pleasures. I am wild about Roots Soap Co., a local (absolutely darling) mama makes it; non-locals can pick it up in her online shop. 8. The Glorious Italian Language - I wasn’t satisfied with the little “mangias” and “grazies” and “pregos” of my youth. I checked out my first how-to-speak Italian book when I was six, maybe seven. At 19 I enrolled in an Italian course only to drop it after falling sick and getting too behind. I read Eat, Pray, Love earlier this summer and it immediately renewed my interest. I may have even started watching the most viciously trashy television show in the history of the universe, just to catch a glimpse of Florence. I may have also (totally, beyond out-of-character for me), gone to a complete stranger’s house and met 40 other Italians the other night, just to be around the language. More on this later.

9. Adorable Paper Products – My new grocery list pad and twig pencils (purchased at some darling shop in Hood River).

10. Hand-drawn Playing Cards - We got these cards from a local artist a few weeks back; they’re just so special. Fun, collectable, functional art. Let the epic Canasta battles games begin!
